Pinot Noir

Stems play a vital role in our pinot noir where we view their involvement as not something added to the equation but simply something that has not been removed. They are an integral part of each cluster, much like the role played by a skeleton to its attached flesh and help to provide architecture to the finished wine. Whole cluster fermentation also helps to complement the inherent spherical tendencies of our appellation towards a more Cartesian end point.
